LOVE any opportunity for Mexican Food! Tonight is crazy around here, so Chipotle or Qdoba will the celebration tonight. But Saturday hoping to do it up right with these home made recipes you've posted, thanks!

Best Bites Taquitos are a staple in our house too, but we are saving them for Saturday night. Tonight we are doing cream cheese enchiladas and mango salsa w/ chips. Gotta use all those inexpensive mangos I couldnt resist at the store the other day!!

We are eating mexican rollups. Use any flavored tortilla and roll it around a mix of cream cheese, veges (like tomatoes, black beans, and corn), taco seasoning, and cilantro. Yummy. I dip it in guacamole.

Both those enchilada recipes sound incredible! I don't like regular enchiladas with that red sauce so those variations are right up my alley.

Purely by coincidence....we had Taco Soup (although it's 90+ degrees outside). It's easy because I throw it all in the crockpot in the morning, and my kids love it!
